Baked Salmon with Pumpkin Puree & Shrimp Ravioli
200 g fresh salmon
50g lemon juice
20 g lemon zest
50g fresh dill
Salt and pepper
50g olive oil
Season the salmon with all the ingredients and pan-fry it for 5 minutes on each side,then bake it for 15 minutes inside the oven.
200 g pumpkin
Cut the pumpkin into cubes.
Season it with salt and pepper.
Drizzle some olive oil on the baking tray.
Bake it for 45 minutes.
Mince it until it becomes puree.
Serve it with baked salmon.
4 cups of flour
1-tablespoon olive oil
One beaten egg
Mix all the dry ingredients together.
Add the eggs and the olive oil.
Add the water.
Knead the dough for 20 minutes.
Cover it and let it rest for 2 hours.
Roll it and fill it with the shrimp filling.
Brush it with egg and cover it with the other side of the dough
Cut it into squares.
Boil it for 15 minutes.
Shrimp filling ingredients:
500 g shrimps.
100 g cream cheese.
20 g garlic powder.
20g lemon juice.
1 table spoon tomato paste
50 g butter.
In a sauce pan heat the butter and add in the shrimps, garlic powder, lemon juice,and tomato paste for 20 minutes
Mince the shrimp after it is done.
Mix it with cream cheese and fill it with the ravioli .
